Curry Sausage + Veggie Skillet

Have you ever made a curry sausage veggie skillet? With curry, I’m always so stuck on just using it on chicken. Curry chicken over rice. All. The. Time. So, I wanted to step outside my comfort zone of curry and actually use it in other things. I mean, that awesome curry spice is just sitting in the cupboard wanting to be used. One ingredient that I LOVE in curry is the turmeric, which I’ve written a whole separate blog post on the benefits of turmeric. It contains so many health benefits and is seriously amazing.

Any chance I get to use that spice, I do! In this recipe, it’s loaded with vegetables, healthy fats, fiber, gut-healing bone broth, and protein.

P.S. Cauliflower totally has our heart because it’s the only way the kiddos + I will eat our cauliflower. We aren’t huge fans of cauliflower florets. This dish would also make awesome breakfast leftovers with a pasture raised organic egg (sunny side up) on top!

Ingredients

  • 1 Package Organic Chicken Sausage
  • 1 Cup Pinto Beans (Soaked + Sprouted)
  • 1 Tbs Grass-Fed Butter
  • 1 1/2 Cup Broccoli
  • 1 Package of Cauliflower Rice
  • 2 Bell Pepper (Deseeded + Diced)
  • 3/4 Cup Bone Broth
  • 2 Tsp Curry Powder
  • 2 Tsp Garlic Powder
  • Salt To Taste

Directions

1) Heat the skillet on low-medium heat with the grass-fed butter.
2) Brown the sausage + pinto beans in the skillet.
3) Once the sausage + pinto beans are cooked + heated thoroughly, put in the broccoli, peppers, curry powder, salt, and garlic powder. Mix well + cook for 7-10 minutes.
4) Once you’ve cooked the vegetables in the skillet for a little bit, add in the bone broth + cauliflower rice.
5) Cook all of this together, occasionally stirring + mixing ingredients, until most of the bone broth is gone.
6) Enjoy!
