23 Sep Fluffy Pumpkin Cookies {Gluten Free}
I’m SO excited about these. Fall time is my jam! Pumpkin spice is my jam! Not only do these taste good, they make the house smell AH-MAZING! These fluffy pumpkin cookies are so easy to whip up that even the beginner baker can do it + make it awesome. So, yes friend, it’s time to impress your neighbor or your next holiday party with these!
Some key ingredients that I loved + used in this recipe:
- Enjoy life chocolate chips (because these chocolate chips are the real deal + avoid a lot of unnecessary crud)
- Almond flour by Costco. Legit, my favorite almond flour I’ve used yet! AND of course, Costco has a great deal on it. Win-win!
- Make sure to use ORGANIC canned pumpkin puree. While you could use a pumpkin to make it, canned makes this recipe even more simple!
- Hand mixer. Get one on Amazon if you don’t have one! Makes baking easy as pie!

Fluffly Pumpkin Cookies
Ingredients
- 1 1/2 Cup Almond Flour
- 1 Cup Tapioca Flour
- 1 1/2 Tsp Pumpkin Pie Spice
- 1 1/2 Tsp Baking Powder
- 3/4 Cup Coconut Sugar
- 1 Tsp Vanilla Extract
- 1 Egg
- 1/3 Cup Coconut Oil
- 1/2 Cup Puree Pumpkin
- Chocolate Chips
Instructions
- Preheat oven to 350 degrees F.
- In a bowl, combine all of the dry ingredients (ingredients from almond flour to coconut sugar)
- Once all the dry ingredients are mixed together, mix in the rest of the ingredients, except chocolate chips.
- Once the cookie mix is mixed together, fold in the chocolate chips. I didn't measure the chocolate chips. Put as many or as few as you want!
- Put parchment paper along a baking sheet, take a cookie scoop and scoop some of the cookie mix onto the baking sheet.
- Bake for 15-20 minutes, until the toothpick test comes out clean.
