Coconut Wild Rice {Gluten Free | Dairy Free }

Side dishes can sometimes get a bad rep, but incorporating healthful side dishes can take your meals to the next level. This Coconut Wild Rice dish is rich, creamy, delicious, and SO easy to make. It is also gluten free, dairy free, and loaded with tons of healthy nutrients, so everyone can dig in!

Did you know that wild rice isn’t a true rice? It is actually a species of grass, not a grain, so it provides tons of unique nutrients that we don’t often get from other grains. Wild rice has a nuttier flavor and is higher in protein than regular rice. It is also gluten free, high in antioxidants, and a good source of zinc, magnesium, and manganese.

I am totally coo coo for COCONUT! If you are like me and constantly craving a creamy addition to your foods, go for coconut milk. Coconut milk is the liquid that is squeezed from coconut meat, making it creamy and rich. Not only does it provide lots of healthy fats, but it is also dairy free. When shopping, make sure you are choose the unsweetened kind to avoid unnecessary added sugars.

Servings: 4 servings

Ingredients

  • 2 c Coconut Milk unsweetened
  • 1 1/2 c Bone Broth organic
  • 2 c Wild rice rinsed

Instructions

  • Heat a medium size sauce pan on low heat on the stovetop.
  • Add the coconut milk and bone broth to the saucepan and bring to a boil.
  • Add the wild rice and reduce to a simmer. Cook for about 30 minutes or until desired rice consistency is achieved.
  • Serve with your favorite lean protein and veggie. Enjoy!

Notes

Check out our recipe for homemade bone broth. If you are short on time, you can buy pre-made organic bone broth. Can substitute bone broth with organic chicken broth, if preferred.
