Romesco Sauce

Romesco sauce is a Spanish derived magic elixir originally created to top fish. It is rich in toasted almonds, peppers, and whole tomatoes rich with olive oil and garlic and other spices. It’s a win for most dietary types in that it is vegan, gluten free, and low carb.  Yes to healthy, filling, quality fats!

The consistency and flavor will take any seafood, poultry, or veggie dish to the next level! The recipe I blended makes a large amount of servings so feel free to cut it in half or store in the freezer for future meals. Equipment

  • Food Processor
  • Blender

Ingredients

  • 1 Jar Roasted Red Peppers 12 oz
  • 1 Can Plum Tomatoes Organic, Whole, Peeled
  • 1/4 Cup Parsley Flat Leaf
  • 2 Tbsp Lemon Juice
  • 1 Cup Almonds Roasted
  • 2 Cloves Garlic
  • 2 Tbsp Olive Oil
  • 1 Tsp Cumin
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tsp Salt
  • 1 Pinch Rosemary Optional

Instructions

  • In a food processor, pulse all ingredients until smooth (or desired texture)
  • Serve hot or cold over grilled vegetables, chicken, fish, eggs, or shrimp
