Strawberry Apple Pancakes {Gluten Free + Dairy Free}

These strawberry apple pancakes are gluten free + dairy free (if you don’t put on grass-fed butter at the end). And they are sweetened with natural sources of sugar…APPLESAUCE! Whoooo hooo!

You know what I hate? When the first batch of pancakes in the skillet ALWAYS falls apart. It never fails me. I do add enough oil, but maybe it’s just the fresh clean pan….so, if the first batch falls apart for you, it does for me too.

Then, the rest of the batches are great! 

The kids and I loved these so much! We love classic Sunday morning pancakes + we decided to create these babies!

If you don’t have oat flour, no worries! If you have plain rolled oats, you can use a food processor and just grind them up until they are flour like. I used my immersion blender that came with the food processor attachment, which makes this super easy!

Ingredients

  • 1 Cup Almond Flour
  • 1 Cup Oat Flour
  • 2 Tsp Baking Powder
  • 3/4 Cup Applesauce
  • 1 Tsp Vanilla Extract
  • 5 Eggs
  • Strawberries Chopped
  • Coconut Oil For Pan

Instructions

  • In a bowl, mix the almond flour, oat flour, and baking powder together. **If you don't have oat flour, you can use a food processor and break down rolled oats into a flour.**
  • In the same bowl, add in the applesauce, eggs, vanilla extract and mix well.
  • Heat up a pan with a spoonful of coconut oil. Once the pan is hot, add some batter to it to start making your pancakes.
  • Drop in the chopped strawberries on top of each pancake when it's in the skillet.
  • Make sure that before you start flipping that the bottom of the pancake is firm and cooked. The first batch of pancakes tend to fall apart, but after the first batch they should stay together better.
  • Top with maple syrup and grass-fed butter (if you can tolerate dairy!).
