Healthy Peanut Butter Cups {Pumpkin Style}

Do I need to really explain the love for peanut butter cups? I didn’t think so. These healthy peanut butter cups are perfect if you’re wanting a treat to make either for Halloween or any average day. They are INSANELY easy + you’ll think to yourself – “how did I ever NOT make these?” Having good molds makes this recipe easy + since we’re talking {pumpkin style}, here is where you can get your own pumpkin silicon molds.

Feel free to use in this recipe almond butter or another butter, instead of peanut butter. For me though, I really wanted to use some peanut butter – that classic feel, ya feel me? Another favorite nut butter is cashew butter, so if you can’t do almonds OR peanuts, that is a great option!

Healthy Peanut Butter Cups {Pumpkin Style}

Pumpkin Peanut Butter Cups

Servings: 20 Pumpkins

Ingredients

  • 1.5 Cups Chocolate Chips Enjoy-Life
  • 2 Tbs Coconut Oil
  • Peanut Butter Organic
  • Pumpkin Silicon Molds We bought ours at Target

Instructions

  • On medium heat on the stove, heat up a small pot of a couple inches of water.
  • Put the chocolate chips and coconut oil into a glass jar.
  • Put the glass jar into the pot of water (this acts like a double broiler and helps you avoid microwave use) + use a spoon to stir the chocolate chips + coconut oil until everything is melted.
  • Once melted, take off heat.
  • Spray pumpkin silicon molds with coconut oil.
  • In each mold, put enough chocolate to cover the bottom.
  • Put in freezer for 5 minutes.
  • Take out of freezer and put a teaspoon of peanut butter on top of each chocolate pumpkin. Freeze again for 5 minutes.
  • Take out of freezer and top with the rest of the melted chocolate. Freeze for another five minutes.
  • Take out of molds + store in fridge! Enjoy!
