On medium heat on the stove, heat up a small pot of a couple inches of water.
Put the chocolate chips and coconut oil into a glass jar.
Put the glass jar into the pot of water (this acts like a double broiler and helps you avoid microwave use) + use a spoon to stir the chocolate chips + coconut oil until everything is melted.
Once melted, take off heat.
Spray pumpkin silicon molds with coconut oil.
In each mold, put enough chocolate to cover the bottom.
Put in freezer for 5 minutes.
Take out of freezer and put a teaspoon of peanut butter on top of each chocolate pumpkin. Freeze again for 5 minutes.
Take out of freezer and top with the rest of the melted chocolate. Freeze for another five minutes.
Take out of molds + store in fridge! Enjoy!
