Grilled Vegetable Hummus Appetizer

This grilled vegetable appetizer with fresh hummus makes the perfect party platter for entertaining. Most people want to graze but with options that won’t grow their waistline. My goal is to always provide something extremely nutrient dense yet flavorful when hosting or attending a party. The gorgeous presentation may even have your kids asking to try it out which is a big win! I love this app because the leftovers make a great dinner side or lunch the next day over a salad! The big secret to awesome food is salt, fat, and acid hence the maldon salt flakes, avocado oil, and lemon juice. Olive oil is amazing, but it’s smoke point is 350*. As long as you don’t fire up the grill on high heat, olive oil will be just fine!

Higher quality=more nutrients+ more flavor. Get creative and use seasonal vegetables. When it comes to hummus I have a secret if you don’t want to make your own. I buy organic hummus with simple ingredients and transfer it to a pretty dish. Grandma’s Hummus is made locally in Austin, TX and I’m on board with their delicious products. Try their babaganoush on our charcuterie board. Add quality olive oil, paprika, and fresh chopped parsley on top… voilaaaa! Hummus should not have inflammatory oils (corn, soy, canola) or preservatives so read those labels if you cannot make your own. If you make your own, be sure to remove the outer shell on each chickpea for a creamier hummus. Grilled Vegetables with Hummus

Ingredients

  • Zucchini
  • Carrots
  • Red Bell Pepper
  • Asparagus
  • Olive Oil
  • Avocado Oil
  • Lemon Juice
  • Maldon Salt Flakes

Hummus Dip

  • 8 Oz Hummus Organic, clean ingredients
  • Olive OIl
  • Parsley Chopped for Topping
  • Paprika Optional

Instructions

  • Heat grill
  • Wash and cut vegetables lengthwise
  • Brush veggies with avocado oil, lemon juice, and sprinkle salt
  • Flash sear on grill for 2 Minutes till char markings are visible
  • Drizzle olive oil on hummus. Top with paprika and parsley. Transfer to a small serving bowl
  • Serve on a big platter for a beautiful presentation.
