Earlier this month, I went to such a fun little ladies holiday soirée and my sweet friend said I needed to bring some healthy snacks! (Duh, my speciality!) I decided on my gluten free dairy free gingerbread men and of course this deliciousness – Prosciutto Wrapped Asparagus!
These are so easy to make and whip up for a party or even a side dish for a dinner….or even a snack. Let’s be honest these things are freaking fantastic. This green detox veggie is one of the most nutritionally well-balanced vegetables being high in folic acid. They are also a good source of potassium, + fiber, thiamin, vitamins A, B6, and C. A 5-ounce serving provides 60% of the RDA for folic acid and is low in calories. You can enjoy this veggie raw with some hummus or tzatziki sauce or with minimal preparation on the grill, oven, or stovetop,
Ideally, you want to make prosciutto wrapped asparagus right before your event or meal. They are the BEST when they are hot + crispy. Prosciutto Wrapped Asparagus {Perfect Party Appetizer!}
Ingredients
- 2 Bunches Asparagus
- 5 Packages Prosciutto
- Avocado Oil
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Cut off the thick bottoms on each asparagus.
- Cut each prosciutto slice in half lengthwise.
- Take each halved prosciutto slice and wrap around the asparagus. Try not to overlap when you can. Wrap as tightly as you can too!
- Repeat until all asparagus are wrapped.
- Place wrapped asparagus on the baking sheet. Drizzle evenly with avocado oil.
- Bake for 15 minutes.
- After 15 minutes, turn the broiler on high and broil until prosciutto is crispy (a couple of minutes). **WATCH the oven when you're broiling, everything cooks fast and can easily be burned.
