Breakfast has always been one of my favorite meals of the day + it’s my daughters as well! And pancakes are a classic, duh. BUT, they can take a bit to whip up. Enter in pancake muffins! This is something that you can make batches ahead of time, freeze them if needed, and serve them warmed up with some maple syrup.

In making these pancake muffins, you can use whatever pancake recipe that you love, like our blueberry cassava pancake recipe! I’m making this even quicker by using a pre-made pancake mix by Birch Benders. We’re using Birch Benders Paleo Banana mix to make our pancake muffins!
