13 May Grilled Artichokes with Paleo Lemon Aioli
Grilled artichokes smothered with paleo lemon aioli goodness will blow your guests away! It’s artichoke season but many have zero clue how to cut, prepare or eat them. I agree they are one of the most confusing vegetables. They’re not cheap, so I suggest Youtube if you’re not confident with how to snip them. We all start somewhere.
Artichokes are not only for decadent presentation, but full of nutrients and benefits! This anti inflammatory vegetable increases the production of bile and regulates blood pressure. Eating them promotes brain, bone, and digestive health. Did you know research has shown they can help prevent neural tube defects in infants?
Aside from a grill, my two most loved and used kitchen appliances are my dutch oven and immersion blender. If you don’t own an immersion blender you could use a food processor. This is how I make a variety of braised meats, soups, and sauces. The great thing about an immersion blender is that it provides less cleaning. You just submerge it into the pot you’re already cooking in vs scrubbing down an entire blender or food processor and all its parts.
Grilled Artichokes {with paleo lemon aoili}
Equipment
- Grill
- Dutch Oven
Ingredients
- 2 Artichokes
- 2 Lemon
- 2 Tbsp Olive Oil
- 2 Cloves Garlic Minced
- 1 Tsp Salt
Paleo Lemon Aioli
- 4 Oz Paleo Mayo Primal Kitchen
- 1-5 Garlic Cloves Minced
- 1/2 Lemon Juiced
- 1/2 Tsp Dijon Mustard
- 1/2 Tsp Salt
Instructions
- Preheat Grill
- In a dutch oven (or large pot with lid), fill with water and boil. It's best to steam them first before grilling.
- Carefully cut 1/2 inch off the tops of each artichoke (pointed ends) and thrown into pot with 1 lemon cut in half. If you want a pretty presentation, take kitchen shears and snip away all the pointy tips of the leaves (optional).
- Boil with lid for 15 minutes.
- Remove from water on a plate and cut the artichokes straight down the center through the stems.
- Brush on olive oil, minced garlic, lemon juice of 1 lemon, and salt on all 4 halves.
- Place artichoke halves cut side down on the grill for 5-10 minutes. You want markings so try not to move them around.
Paleo lemon aioli
- Using an immersion blender or food processor, blend the lemon juice, paleo mayo, garlic, dijon mustard, and salt. Dip away!
