22 Aug Fruit Cookie Pizza {Gluten Free + Dairy Free}
Just in time for labor day, I bring you this gluten free + dairy free fruit cookie pizza! Yay! This is one of my FAVORITE desserts that my mom used to make. But, I always felt like crap after I ate it – gluten, dairy, and many other artificial preservatives and junk that was in it. Just look at the ingredients on a package of refrigerated Pilsbury sugar cookie dough.
Not now. Not anymore! I can happily indulge in this treat! We’re kicking gluten + dairy out of the equation, so if you have sensitivities or allergies to these foods, you too can enjoy! 🙂
Feel free to use whatever fruits that you want, but I stuck with the classic strawberries, blueberries, and peaches. I actually used frozen blueberries and peaches because I didn’t have fresh on hand. It worked out great!
Make sure you read the recipe notes to understand how to work the coconut cream. Organic without added fillers or preservatives is best. If it doesn’t work out perfectly, that’s totally okay. I’m sure it will still taste good! 😉

Fruit Cookie Pizza {Gluten Free + Dairy Free}
Ingredients
Sugar Cookie
- 2 Cups Almond Flour
- 1 Tbsp Tapioca Flour
- 1 Tsp Baking Powder
- 1/2 Cup Coconut Sugar
- 1 Egg
- 1 Tsp Vanilla Extract
- 1/4 Cup Coconut Oil
- 1 Scoop Collagen Vital Proteins*
Cream
- 1 1/2 Cups Powdered Sugar Organic
- 8 Oz Almond Milk Cream Cheese Kitehill
- 1/2 Cup Coconut Cream Whipped (Read recipe notes)*
Fruit
- Strawberries
- Blueberries
- Peaches
Instructions
- Preheat oven to 350 degrees F.
- In a bowl, mix all of the cookie ingredients together. Mix it until it becomes a firm dough.
- Spray some coconut oil on a pizza pan and put your sugar cookie dough on the pan. Roll it out evenly to cover the pan. Bake for 10 minutes or until the crust is turning golden brown.
- While the cookie bakes, put the cream cheese and powdered sugar in one bowl and mix together.
- In a separate bowl, take 1/2 cup of the coconut cream* and whip that up separately with a electric whisk.
- Once the coconut cream is whipped, mix it into the cream cheese and powdered sugar.
- Let the cookie completely COOL DOWN before applying the cream on it. Top it with chopped fruits of your choice. Put it in the fridge and enjoy!
