Preheat oven to 350 degrees F.
In a bowl, mix all of the cookie ingredients together. Mix it until it becomes a firm dough.
Spray some coconut oil on a pizza pan and put your sugar cookie dough on the pan. Roll it out evenly to cover the pan. Bake for 10 minutes or until the crust is turning golden brown.
While the cookie bakes, put the cream cheese and powdered sugar in one bowl and mix together.
In a separate bowl, take 1/2 cup of the coconut cream* and whip that up separately with a electric whisk.
Once the coconut cream is whipped, mix it into the cream cheese and powdered sugar.
Let the cookie completely COOL DOWN before applying the cream on it. Top it with chopped fruits of your choice. Put it in the fridge and enjoy!
