Turkey Sweet Potato Noodles w/ Almond Sauce

When I was making this sweet potato noodle recipe, I was kinda just putting foods together that needed to be cooked. I bought the sweet potato noodles earlier from HEB + I had bok choy that I needed to use up. But, as I was throwing things together, it got good. REALLY GOOD. Especially with the almond sauce.  Potatoes are on the 2020 EWG’s dirty dozen list, so spirilizing your own is an option when you cannot find pre spirilized organic. The Inspirilizer is one of my favorite kitchen tools for potatoes, beet, and zucchini noodles. My kids enjoy watching me create “veggie pastas” right in front of their eyes. 

I’ve always wanted to make something like peanut sauce – I mean that’s ultimately how you spice up dishes right…..THE SAUCES. I decided to throw together what I knew about peanut sauce + make an almond sauce. A great alternative for people avoiding or sensitive to legumes.

Pssst, peanut is a legume, NOT a nut. If you didn’t know.

This dish was SO good! It will be made again. Over. And over.

Turkey Sweet Potato Noodles w/ Almond Sauce

Ingredients

Dish

  • 1 Tbsp Toasted Sesame Oil
  • 1 Lb Ground Turkey
  • 1 Stalk Bok Choy Chopped
  • 2 Stems Green Onions Chopped
  • 1/2 Tsp Ginger Powder
  • 1/2 Tsp Garlic Powder
  • Sweet Potato Noodles *I bought 1 box of pre-made noodles

Sauce

  • 1/2 Cup Almond Butter
  • 3 Tbsp Coconut Aminos
  • 1 Lime Juice
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Ginger
  • 1/2 Tsp Toasted Sesame Oil
  • 1 Tbsp Honey
  • Water

Instructions

  • DISH: Heat up a skillet on medium heat with the toasted sesame oil.
  • Start cooking the ground turkey in the skillet until halfway done. When the ground turkey is halfway done, add in the rest of the dish ingredients. Cook all the way through until vegetables are soft and turkey isn't pink.
  • SAUCE: Add all of the ingredients into a blender, except the water. Blend it as much as you can. Slowly add a tbsp of water into the blender until it's the perfect consistency. The consistency shouldn't be too watery, but not too thick. It should pour slow, steady, and smooth.
  • Top the sauce over the dish and enjoy!

Notes

I always put the turkey sweet potato dish on everyone's plate and THEN, drizzle the sauce on top of each plate. 🙂
