11 Apr Sweet Potato Diner Hash
Sweet potato diner hash is one of my favorite side dishes to order with my eggs when I go out to breakfast. place It’s also of my favorite sides to meal prep for the week, so I don’t get bored of JUST eggs. Prep a bunch of potatoes and they will last you all week to use for this dish, buddha bowls, salads, ect. You can easily put an over easy egg on top of this hash!
Sweet potatoes are an excellent source of fiber, vitamin A, magnesium, anti inflammatory properties, choline, and many other vitamins. They also contain anthocyanins which serves in the prevention and reduction of chronic inflammation. Remember that potatoes are on the EWG’s dirty dozen list so aim for organic to be safe!
As you cook this dish, feel free to use as much coconut as needed, so your pan doesn’t get burnt and food starts sticking. Hands down, one of the most annoying things.

Sweet Potato Diner Hash
Ingredients
- 5 Sweet Potatoes Chopped
- 1 Onion Chopped
- 1-2 Red Peppers Chopped
- 1 Tbsp Coconut Oil Use more if needed*
- Salt + Pepper To taste
Instructions
- In a large skillet over med/high heat, put some coconut oil in a pan and let melt.
- Place the chopped sweet potatoes, onions, and peppers into the skillet and cook until potatoes are soft. The time varies depending on how big you chopped the potatoes. Add more coconut oil to the skillet if you need to prevent burning and sticking. Use a lid over your skillet to accelerate the cooking time.
- Once finished cooking, top with salt + pepper to taste! I love using an all-seasons salt from Simply Organic!
