Grain free granola is just that.. granola without any grains. Yup, you heard that correctly, no oats, quinoa, spelt, wheat, etc. Ours replaces refined sugar for the natural sweetness of cinnamon and dates. For years,

I’ve been making this granola to put in my kids smoothie bowls, on fruit, a sweet potato, yogurt, or their morning oatmeal. The options are endless. Don’t get me wrong, there are many great paleo brands out in stores but they are pricey and full of sugar!! I personally feel that granola should be used to enhance a snack or meal while the number one priority be nourishment. The mixture of roasted nuts with cinnamon, dates, and coconut oil provide a distinct warming sweetness that is rich in flavaaa!

Nuts are the perfect way to get in your healthy fats and benefit heart health. Pumpkin seeds are a great source of zinc and omega-3s. Cashews help produce red blood cells since they’re high in iron and copper. Pecans help balance cholesterol and blood sugar levels. Cinnamon has so many incredible benefits including antioxidant, anti- inflammatory, anti- microbial, immune boosting properties. Cinnamon is also packed with antioxidants that protect against free radical damage.

As I always say, a food processor will simplify your life from chopping nuts, to shredding and chopping coarse veggies. (cauliflower rice, shaved brussel sprouts, granola, homemade sauces) If you are not a fan of making your own, I highly trust and recommend Purely Elizabeth. Pair this with our cinnamon vanilla coffee in the morning.

Ingredients

  • 1 Cup Almonds Raw, Organic
  • 1 Cup Pecans Raw, Organic
  • 1 Cup Cashews Raw, Organic
  • 1/2 Cup Pumpkin Seeds Raw, Organic
  • 1 Cup Shredded Coconut Unsweetened
  • 1/2 Cup Coconut Oil
  • 1 Tbsp Cinnamon
  • 1 Tbsp Vanilla
  • 2 Tbsp Chia Seeds
  • 3 Dates
  • 1/2 Tsp Sea Salt

Instructions

  • Heat oven to 350
  • In a food processor add almonds and dates. Pulse
  • Add in all other nuts, vanilla, sea salt, and coconut oil. Pulse until barely chunky
  • Spread out granola on Silpat mat/ parchment paper(optional) on baking sheet and bake for 20-25 minutes stirring once or twice until slightly golden brown.
