BLT Pasta Salad {Fast + Gluten Free}

This is one of my favorite little meal prep dish for school lunches + just quick dinners or lunch. Have you ever tried BLT Pasta Salad? We use Banza pasta to make this dish #glutenfree + adding more protein + nutrient density! This is actually super easy to make and it’s a family favorite!

This can be #dairyfree if you leave out the sour cream, but if you do want to use sour cream, we love Green Valley Organics because of the quality of the dairy, along with them adding the enzyme lactase to make it easier to digest. Totally optional though – it does add a sense of creaminess to it!

The BBQ Ranch you can get from Primal Kitchen (in the salad dressing aisle) or online on their website. Use this not only in this recipe, but for your salad in the future + don’t regret it!

Ingredients

  • 6-8 Slices Bacon We used turkey, but can use good quality regular bacon!
  • 8 Oz Banza Pasta
  • 1/2 Head Butter Lettuce
  • 1/2 Cup Mayo Avocado Oil Mayo*
  • 1 Tbsp Sour Cream OPTIONAL* I love using Green Valley Organics
  • 1/4 Cup BBQ Ranch by Primal Kitchen
  • 3 Tbsp Tomato Diced
  • 2 Tbsp Green Onion Chopped

Instructions

  • Heat up a pot of water and cook Banza pasta per the box.
  • Preheat the oven of 375 degrees and bake the bacon until it's crispy!
  • When the bacon and pasta is done, mix all the ingredients in a bowl.
  • Enjoy!
