08 Nov BBQ Meatloaf {Gluten Free}
One of my favorite recipes to date is BBQ meatloaf! Meatloaf is always one of our favorite family dinner recipes and I’ve honestly never thought about spicing it up with different flavors. Meatloaf is meatloaf, right? WRONG. We are OBSESSED now with this BBQ meatloaf.
It’s great too if you’re avoiding any gluten because we use coconut flour versus regular flour/crackers. This is offically into our weekly rotation! I served this up with some roasted broccoli and sweet potatoes with some grass-fed butter. Feel free to serve this up with a salad or any other veggie you like!
Also, if your kiddo is a picky eater…this meatloaf has some kale and other veggies that will benefit your kiddos.
I used an organic BBQ sauce from Trader Joe’s, but feel free to use another organic BBQ sauce or your own in this recipe! WATCH OUT for any crummy vegetable oils that can be hiding in BBQ sauce. You’ll be surprised when you see soybean oil or canola oil in it. In conventional BBQ sauce, you’ll also find high fructose corn syrup you should steer clear from!
BBQ Meatloaf {Gluten Free}
Ingredients
- 2 1/2 lbs Grass-Fed Ground Beef
- 1 Onion Chopped
- 1 Cup Kale Frozen, Chopped
- 4 Garlic Cloves Chopped
- 1/4 Cup Coconut Flour
- 2 Eggs
- 1 Cup BBQ Sauce Organic
- Salt + Pepper
Instructions
- In a bowl, mix all of the ingredients together. I personally use my hands to mix it all together well. *LEAVE some BBQ sauce leftover, so you can top it over the meatloaf towards the end!*
- Preheat oven to 375 degrees F.
- On a sheet pan, pour the meat mixture on it. Form a meatloaf shape!
- Bake for 30-45 minutes.
- Take out of the oven and pour the rest of the BBQ sauce on top of the meatloaf. Bake for another 10-15 minutes.
