Pecan Crusted Cajun Salmon

Ingredients

  • 1 1/2 lbs. Salmon wild-caught, cut into 4 fillets
  • 1/3 c Pecans raw, unsalted, finely chopped or coarsely ground in food processor

Cajun Seasoning Blend

  • 2 tsp Paprika
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Oregano
  • 1 tsp Thyme
  • 3/4 tsp Cayenne
  • 3/4 tsp Black Pepper
  • 1 tsp Salt

  • 3 T Olive Oil
  • 4 T Lemon Juice juice of 1 lemon

Optional garnish

  • 1 Lemon sliced

Instructions

  • On a large plate or shallow bowl, mix together the pecans and cajun seasoning blend.
  • Brush 1/2 T of olive oil on each of the salmon fillets.
  • Press the top and side of each fillet into the pecan and cajun seasoning mixture, creating a crust. Transfer fillets to a plate.
  • Heat the remaining olive oil in large skillet on stove top over low-medium heat.
  • Place each salmon fillet into the skillet, crust side down. Cook for ~3-4 minutes, peeking occasionally to make sure the crust does not burn. Flip salmon fillets, and cook for another ~6-7 minutes, or until desired internal temperature is achieved. The cooking time may vary depending upon your preference and the thickness of your fillets.
  • Remove salmon from heat and juice 1/4 lemon on each fillet.
  • Garnish with lemon slices if desirable. Serve with your favorite leafy green.

Notes

Don't have pecans? This recipe will work well with other nuts such as almonds or walnuts. 
If you don't have time to measure and mix your own cajun seasoning mixture, you can buy a cajun seasoning blend from the store. Just make sure it is not too high in sodium.
