Peel (or don't) apples and cut into large chunks, tossing the core.
In a dutch oven or pot on stove, add apples with heat set to medium.
Cover and cook down apples for about 20 minutes until softened, stirring occasionally. (Apples release their own juices so you don't need water)
Add cinnamon, stir, and serve or refrigerate.
* Any apples + any amount can be used in this recipe. I highly recommend at least 1 Granny Smith for tartness. *
