Halve, peel, and mince shallot.
Half and juice lime.
Finely chop cilantro and pineapple. Save all pineapple juice! (I buy the fresh pre cut pineapple).
In a bowl, mix coconut aminos, pineapple, 2 tsp shallot, 1/2 cilantro, and juice from one lime.
Season pork chops with salt and pepper.
Cook pork chops in hot pan appx. 4-5 minutes per side.
Stir in shallot, honey, pineapple mixture with 2 tbs of water and lightly simmer
Top with extra cilantro and serve!
